The topside cap on is obtained from the back third of the beef. This meat is very lean, but also very tasty.

Use and consumption

As it is a fairly large cut, ideal for filleting in escalopes. It is perfect for grilling and even for frying.

Defrost

We recommend defrosting slowly and cold, so that the meat retains its optimum qualities. Accelerated defrosting or defrosting without cold conditions is not recommended.
