Silverside

The silverside is the external part of the thigh and is one of the largest parts. It has very little fat and therefore is somewhat drier and tougher than other parts.

Use and consumption

As this meat is less tender, it is perfect to prepare it roasted in the oven or even better, in any stew. Some people also prefer to prepare these noble cuts in fried breaded fillets.

Defrost

We recommend defrosting slowly and cold, so that the meat retains its optimum qualities. Accelerated defrosting or defrosting without cold conditions is not recommended.
