Eye round

The eye round is the part removed from the external side of the hind leg. It has a circular shape, hence its name. It is a tender meat, without nerves and with little fat.

Use and consumption

This meat can be cooked either roasted in the oven or stewed and even used to prepare minced meat products. Although less than top rump, it is a rather dry meat, so it is important to control cooking times to ensure the final tenderness of the product.

Defrost

We recommend defrosting slowly and cold, so that the meat retains its optimum qualities. Accelerated defrosting or defrosting without cold conditions is not recommended.
