Shank

The beef shank is the lower part of the beef legs. Its meat us lean, fibrous and jelly-like. When thick bone-in slices of shank are cut transversally, it is popularly known as ossobuco.

Use and consumption

This meat is ideal for stews thanks to its mellow and jelly-like texture. In fact, it is used to prepare the traditional Madrid stew, as well as many other stews.

Defrost
